IN INDIAN SUGAR 30 AND 31 REPRESENT THE COLOR SERIES OF SUGAR. 30 IS WHITE AND 31 REPRESENTS THE SUPER WHITE.

What's Polarisation (POL) in Sugar?

Polarisation (or pol) is the apparent sucrose content is expressed as a mass percent measured by the optical rotation of polarized light passing through a sugar solution. Raw sugar is usually specified at 96 degrees polarisation, with white sugar at 99.8 degrees polarisation (=99.8% sucrose).  POL is an approximate measure of the sucrose content of the sugar. Polarisation is measured by preparing a standard solution from the sugar and measuring the optical rotation of polarised light passing through a cell containing the solution. Sugar of 98 degrees pol would contain about 98% sucrose.

The Sugar Technologists Association of India and Indian Sugar Mills Association, etc. organizations have approved the set of seven sugar standards in seven grades i.e. L31, L30, M31, M30, S31, S30 and SS 31. 

While L, M, S and SS denoted crystal size as large, medium, small and super small, 31 and 30 represent the colour series with 31 being superior white.

What is the Difference Between S30 And S31 Sugar?

Answer: S-30 and S-31 are the Different Grades of Indian Cane White Crustal Sugar. S denotes the sizes of the sugar granules.  M means "Small-Sized" sugar granules. 30 and 31 define the whiteness of the color of the sugar granules. 31 color grade is more white than the 30 color grade sugar and hence costlier than 30 grade also.

Note: 31 color grade sugar is the Refined Sugar.
