Blanched or Blanching is a process of Peeling the outer skin of a given food item.
In the Blanching process, a food item is boiled in water or immersed/dipped in boiled water for a few minutes/seconds/short time intervals to remove its outer skins, to make the food item white, to remove some strong flavors if available, and then immediately plunge/immerse/dip in ice cold water or to put into a quick freezing condition to stop/halt the cooking process instantly. This sudden confrontation of food item(s) to 2 extreme temperatures is also known as the Shocking Treatment of the food item. This makes the outer reddish skin of peanuts loose and it can be easily peeled off. Also, such blanched/peeled peanuts are/maybe further roasted to enhance their taste, texture, and appearance.
