What is Xanthan Gum?

Xanthan Gum is a polysaccharide with many industrial uses, including as a common food additive. It is an effective thickening agent and stabilizer to prevent ingredients from separating. Xanthan gum is a complex exopolysaccharide produced by the plant-pathogenic bacterium Xanthomonas campestris pv. campestris. Because of its physical properties, it is widely used as a thickener or viscosifier in both food and non-food industries.
