Valencia oranges sometimes endure a natural process called "regreening" in late spring and summer and
it occurs when the fruit is left on the tree during the summer months.
So Valencia Oranges go through a regreening process, which is when the fruit reabsorbs chlorophyll giving it hues of green even though the fruit is fully ripe.
In this process, warm temperature causes a pigment called chlorophyll to return to the orange's skin which causes the greenish tint.
Regreening does not affect the flavor of the orange.
The color of skin has no effect on the sweetness or quality of the orange.
And hence when ripe, Valencia oranges have a balanced, sweet-tart flavor.
That's why the world's most important commercial variety, Valencia oranges are often called summer oranges.
So, don’t be deterred if you see a tinge of green on Valencia oranges—it doesn’t mean that the fruit is unripe.

Segmentation-Pair Valencia oranges are segmented with olives, mint, feta, onions, rice, chiles, melons, root vegetables, poultry, seafood, pastries, and baked goods. The segments can also be dipped in chocolate, or the rind can be candied and served as a sweet, tangy treat.
Zest -Used as zest and juice to compliment butter, creams, honey, custards and vinaigrette. Valencia oranges will keep up to two weeks in the refrigerator.
Use of Flesh as Raw- When used raw, the flesh can be segmented and served drizzled in honey and bee pollen tossed into green salads, grain bowls, fruit bowls, or garnished over fish.
Cooked applications-Valencia oranges are also used in raw or cooked applications.
